Pears, cut kaffir lime leaf and jasmine blossom. White pear flesh and grapefruit citrus characteristics from the Semillon. Chardonnay brings some stone fruit flesh and greater middle palate weight with softness from maturation in neutral oak barrels. A granny smith green apple tang driving the acidity with a lovely chalky texture to finish.

Winemaking

Both of the Semillon and Chardonnay were hand harvested on separate occasions. The fruit chilled in a cool room overnight and whole bunch pressed the following morning. This technique gives us the finest juice with minimal phenolics or grip. Gravity filled for fermentation in old oak barrels, the juice unclarified to build weight and texture. The varieties blended for balance before bottling.

Varietals: 85% Semillon 15% Chardonnay

Region: Yarra Valley, Victoria, Australia.

Vines: Fruit for this wine was sourced from a dry grown block south of Underhill Vineyard, slightly higher in elevation. It was once part of the Underhill Vineyard before being subdivided for its sale to Yarra Yering. A Bordeaux inspired white blend of Semillon and Chardonnay.

Cellaring: A bright and refreshing young wine. With time, Semillon’s magic will shape it into a toasty, layered wine – rewarding up to 8 years of careful cellaring.

Alcohol: 12.5%
