2021 Syrah - Warramate

Winemaking

The majority of fruit was destemmed gently to retain many whole berries to a series of small 600kg fermenters. Occasional use of 20% whole bunch inclusion to some fermenters brings a fruit succulence and a stalk lift to the nose and a welcome tannin presence to the palate. Hand plunged gently to aid in the extraction of colour, flavour and tactile palate components. Maturation time in barrel was 15 months prior to bottling. All 228L oak barriques, 100% French with 10% new barrels.

Violets and plummy fruits make for a lively, generously fruitful wine entwined with a pink peppercorn spice element. An elegant style reflecting its cool climate origins, its medium bodied weight, a cool undercurrent of blue fruits, the succulent and richly layered palate is supported by some stalk tannin firmness.
