Winemaking

Hand harvested and whole bunch pressed for the purest juice. A cool fermentation with neutral yeast to preserve aromatics. All completed in stainless steel tank and bottled early to capture its vibrancy and freshness.

Cellaring: An energetic and vibrant young wine, perfect with seafood with its lemony appeal. The magic of this variety to mature in bottle into a completely different wine with beeswax, honey and toasty complexity is well documented.
